Chicken and Almond


Chicken and Almond Recipe (8 Servings)

Ingredients for Chicken and Almond

  • 1/2 pound of mushrooms, sliced

  • 1 green pepper, chopped

  • 1/2 cup butter

  • 1/2 teaspoon seasoned salt

  • 4 cup diced chicken

  • 1/2 cup dry white wine

  • 2 cups heavy cream

  • 2 egg yolks, beaten nutmeg

  • 6 thin sliced Swiss Cheese

  • 1/4 cup sliced almonds

Preparation Method for Chicken and Almond

1. Sauté mushrooms and pepper in butter until soft.  Sprinkle with salt and add chicken

2. Stir in wine and cook until liquid reduces to about half.  Add heavy cream and scald mixture. (Bring it just to boiling point, but not to boil.).  Beat in egg yolks and continue to cook, stirring constantly, for about 5 minutes until liquid begins to thicken.  Season to taste with more salt and nutmeg.

3. Place in casserole.  Cover chicken with cheese and sprinkle almonds on top.  Place under broiler.  Broil until cheese melt.

Carbohydrate per serving of chicken and almond  : 5.5 g
