Sweet and Sour Chicken


Sweet and Sour Chicken Recipe (4-5 Servings)

Ingredients for Sweet and Sour Chicken

  • Skinless chicken breast halves

  • 2 tablespoon oil

  • salt and pepper to taste

Sauce Ingredient

  • 1/2 cup drained and rinses black soybeans

  • 2 tablespoon butter

  • 3/4 cup chopped onion

  • 1 cup canned, crushed tomatoes

  • 1 cup chicken stock or broth

  • 1 cup dry white wine

  • 1 teaspoon hickory smoked liquid

  • 1/2 teaspoon powder

  • salt and freshly ground pepper to taste

  • 4 packets Splenda sugar substitute (or to taste)

Preparation Method for Sweet and Sour Chicken

1. Preheat oven to 325 degree F.  Butter or oil a medium size oven proof casserole dish.

2. Mash soybeans in a food processor or blender.  To make the sauce, heat a small skillet over medium heat.  Add butter.  When butter foams, sauté onion lightly.  Put onion and all other sauce ingredients in a 2 quart sauce pan.  Simmer sauce gently for about 10 - 15 minutes while you prepare and brown the chicken  pieces.

3. Wash chicken, and pan dry with paper towels.  Cut each breast in bite size pieces.  Heat a large, heavy skillet over medium heat.  Add oil.  Add chicken to the hot oil and brown quickly on both sides (for about 1 minutes).  Sprinkle the chicken with salt and pepper.  Transfer chicken to the casserole dish. 

4. Pour the sauce over the chicken.  Dot with butter.  Bake uncover for about 1 hours.  Serve immediately.

Carbohydrate per serving of sweet and sour chicken : 8.6 gram
