Bacon Lettuce Tomato Soup

Bacon Lettuce and Tomato Soup ( 6 servings)
8 slices bacon
1 large onion, chopped fine
1 garlic clove, finely minced
2 carrots, peeled and chopped fine
1 celery stalk, chopped
28-ounce can whole tomatoes in juice
3 cups beef stock
2 tablespoons chopped fresh basil
11⁄4-inch by 1⁄2-inch strip orange zest
1 teaspoon salt
1 packet Splenda sugar substitute
1⁄4 teaspoon pepper
6 tablespoons sour cream
11⁄2 cups shredded romaine lettuce
Bacon Lettuce and Tomato Soup
1 Using a 4-quart saucepan, cook the bacon until crispy (about 5 minutes). Drain the bacon on paper towels. Cut the bacon slices into 1⁄4-inch strips.
2 Add the onion, garlic, carrots, and celery to the bacon drippings. Over moderate heat, cook until tender (about 8 minutes).
3 Stir in the can of tomatoes with juice, stock, basil, zest, salt, Splenda, and pepper. Bring to a boil. Reduce heat to low and simmer covered for about 30 minutes. Set aside tocool.
4 Remove the strip of orange zest. In batches, puree the mixture in the food processor until smooth. Return the pureed soup to the saucepan, and cook until heated through, approximately 5 minutes.
5 Serve in soup bowls. Top each serving with a 1-tablespoon dollop of sour cream and approximately 1⁄4 cup of shredded lettuce. Then sprinkle each serving with crispy bacon.
