Baked Spinach (Serves:4)

Baked Spinach Ingredients:

  • 3/4 cup spinach (1/2 frozen package or 3 cup fresh)

  • 1/4 cup water

  • 3 tablespoons olive oil

  • 3 tablespoons butter

  • 3 tablespoons minced onion

  • 1 clove garlic, minced

  • 5 eggs

  • 3 tablespoons cream

  • pinch of black pepper

  • 3 tablespoons grated Parmesan cheese

Baked Spinach Preparation Method :

Preheat oven to 350 degree F.

Wash spinach well to remove all sand.  Do not dry.  Place spinach in saucepan with water, cover and steam for about 6 minutes.  Drain.

Heat olive oil and butter in skillet.  Add onion, garlic to skillet.  Cook slowly until onion is light brown.  Add onion mixture to spinach.  Simmer for 5 minutes. 

Beat egg with cream, add pepper.  Add spinach mixture and Parmesan cheese to egg.  Lightly oil and 8 inch-square baking dish.  Place mixture in dish, and bake for 30 minutes in 350 degree oven.  Cut into 4 square for servings.  Enjoy your baked spinach.
